Start the morning with a delicious welcome from Café Mediterraneo’s team, where they offer freshly baked breads, cereals and house made granola, fruits and many functional juices for breakfast. At the end of the morning in your comfortable beach chair -ask for a frozen mojito or piña colada at the beach bar. For lunch, do not miss Café Mediteraneo for hydroponic salads and amazing pizzas or if you prefer to eat at the beach, try the Shack Menu at the Beach Bar - the cookie sandwiches served with ice cream for dessert are unbeatable -We love the ginger cookie stuffed with banana sorbet. If you are a golfer, the lunch menu at Italia is divine – from eggplant caponata, to grandma’s spaghetti and meatballs, to delectable paninis – endless options!
You will need at least 3 nights to dine at the resort to enjoy the outstanding cuisine. Le Bistro at Santorini is where you will experience a true “Farm, Land, Sea” concept from renowned Executive Chef Jasper Schneider. Begin your gastronomic journey fresh burrata, beet salad or foie gras. For the main course, the Mahi Mahi, lobster, or cauliflower vegetarian dishes are a must. Another good option is the Chef’s Tasting Menu created by the Chef, offering incredible selections of what is fresh for the day. Tokyo Bay, led by Chef Joe Richardson, is wonderful. Start with foie gras tuna, followed by 15 daily selected sashimis or choose Omakase, where you surrender to an exclusive dining experience prepared by the Chef or indulge in a unique Teppan experience. Italia (photo) at the Clubhouse offers selections inspired by traditional southern Italian recipes in a beautiful setting. In addition, the “Chef’s Table Dining Experience” takes place every Wednesday. Besides the gastronomic experience of 7 courses prepared by Chef Jasper, an intimate tasting of valuable wines from the hotel cellar gives the perfect balance for each one of the dishes.
Start your day leisurely. Open the curtains slowly and let the stunning views embrace you. Relax for another half hour in the bed; hotel mattress is so good that it is difficult to get up. Ask for the breakfast in your room or enjoy it the Café Mediterraneo. There are many activities! Take a guided tour of the hydroponic farm or landscaping – think of a tennis lesson or a cooking class...or do nothing at all and head to the pool with a book. Later in the morning, take a few steps to the beach, where you will spend most of your days among snorkeling, mojitos and piña coladas! In the afternoon after the beach, try a golf lesson at the hotel's Golf Club, the only one on Anguilla, one of the island’s wonders. End up your day at Venus Spa with an Anguillian massage. After dinner at Tokyo Bay, Le Bistro at Santorini or Italia, take the beach right to the neighboring bar Dune Preserve, voted world's best beach bar, for a pocket show with the star Bankie Banx.
